Halloween Is JUST Around The Corner by Jennifer Kacey

It's October!!!!!!!!
It's the start of one of my favorite months. Why you say??
It's fall and seasons changing with beautiful leaves. Pumpkin carving, time with family and friends. Time off to breathe and catch up on things.
And apple cider and drinking tea everyday (I LOVE TEA!!!).
But it's also HALLOWEEN this month!!!

OMFG do I love Halloween. You get to dress up and be someone/something else for a day. It's so much fun, and silly. Delightful!!
I normally have my costume picked out months ahead of time. This year? Nothing. I have a few ideas but nothing decided. Ooohhh but I have the coolest skeleton leggings to wear beforehand!

So in my search online for ideas I came across all sorts of neat / hilarious / fantastic and holy shit costumes and thought I'd share to get everyone in the mood for the Trick or Treat season.

Happy 4th of July!!!

The Seattle area is having a heat wave, so of course I'm baking in preparation of the 4th of July holiday. Yep. I'm really warm now. My little town holds a festival every year with crafts, food vendors, bands, and my favorite- the classic car show! But we all know that second to the fireworks, food is what's on everyone's mind when it comes to the 4th. Grilling and chilling, that's my motto.

Last year I made for the first time a recipe I saw on the Food Network's Diners, Drive-ins, and Dives. Huli Huli Chicken from the Fresh Catch restaurant in Honolulu. It is fantastic. Sweet, a little spicy, oh so juicy, and surprisingly easy to make. Now I know most of us do not have a Huli Huli spit, you can still pull this recipe off in a good, old-fashioned oven. Try it. You'll love it.

Ingredients
Huli Huli Chicken Brine:
1 cup kosher salt
1/2 cup sugar
3 bay leaves
3 cloves garlic, peeled and smashed
3 cups ice
One 5- to 7-pound whole chicken
Huli Huli Sauce:
1 cup pineapple juice
1/2 cup ketchup
1/2 cup soy sauce
2 tablespoons sherry vinegar
1/2 cup light brown sugar
2 teaspoons ground ginger
Dry Rub:
2 tablespoons garlic powder
2 tablespoons kosher salt
1 tablespoon plus 1 teaspoon paprika
1 tablespoon cayenne pepper
1 tablespoon onion powder
1 teaspoon ground cumin
Freshly cracked black pepper
1 lemon, juiced
Directions

Begin by placing the whole chicken, breast-side down, on the preparation surface. Using kitchen shears, remove the backbone by cutting up from the tailbone to the neck on both sides. Open the bird, remove the breastbone and wishbone. Make small cuts on both sides below the thighs to tuck the wings under so you have a flattened "spatchcock" chicken.

For the brine: To a small saucepan, add 1 cup water, the salt, sugar, bay leaves and garlic cloves. Bring to a simmer to dissolve the salt and sugar. Once at a simmer, turn off the heat and add the ice. Once the liquid is cool, place into a resealable bag over a bowl and add the chicken to the brine, making sure it is completely submersed. Allow to brine in the fridge for 1 hour.

For the Huli Huli sauce: In a small saucepot over medium-low heat, combine the pineapple juice, ketchup, soy sauce and sherry vinegar. Once the liquid simmers, whisk in the brown sugar and ginger. Continue to simmer until the liquid begins to thicken, about 5 minutes. Remove from the heat and let stand (or prepare ahead and refrigerate until ready for use). Once ready for use, reserve about a cup to serve.

Preheat a grill to medium heat.

For the dry rub: Remove the chicken from the brine and pat dry. Thoroughly mix the garlic powder, salt, paprika, cayenne, onion powder, cumin and some black pepper together in a small bowl. Coat the chicken with the dry rub, making sure to sprinkle well inside the cavity. Lay the chicken flat on the preparation surface, making a neat, rectangular package with the thighs tucked next to the breasts and the wings inserted into the slits.

To grill: Secure the chicken in a medium rectangular wire-mesh grilling basket and set over an open grill flame. Char with the breast side down first, 7 to 8 minutes. Turn once and continue to grill, bone-side down for another 15 minutes.

Continue to turn as it cooks so it doesn't burn and it replicates the Huli Huli machine cooking process. Squeeze the lemon juice over the chicken as you turn it. Finish by alternating sides until the chicken is thoroughly browned, the skin is crispy and a digital instant-read thermometer tucked under the breast confirms the internal temperature is 165 degrees F. The total cook time will be 35 to 40 minutes. With a heat-resistant silicone pastry brush, glaze the chicken with the Huli Huli sauce the last 5 minutes. Remove from the basket and allow the chicken to rest for 6 to 8 minutes.

To serve: Carve the chicken into breasts, thighs and wings. Arrange on a large serving dish alongside the reserved Huli Huli sauce.

And of course you must have dessert. On the menu is sugarfree peach cobbler and a gooey Chocolate Triffle. Both are super easy to make.

Sugar Free Peach Cobbler
Six peaches peeled and sliced
1 cup Truvia (or your favorite sweetener)
Tablespoon cinnamon
Lemon juice
6 tablespoons butter
1 cup flour
1 cup Truvia
1 tablespoon baking powder
1 cup milk
                                                           pinch of salt

Combine in a bowl peaches, 1 cup sweetener, half the juice of a lemon, and cinnamon.
Melt half of the butter in a baking dish. Pour peaches into dish then cut of the rest of the butter into pieces and dot on top of the peaches.
Mix together in a bowl the flour, 1 cup sweetener, baking powder, salt, and milk. Pour on top of the peaches.
Bake at 350 degrees for 40 minutes. Yum!

Chocolate Trifle.
I had a chocolate cake leftover from a birthday party this week. So I cut it up into cubes, layered the pieces into a trifle dish with chocolate syrup (chocolate chips and cream melted together), crushed up Heath candy bars, and whipped cream. Layer, refrigerate, and enjoy!

Resolutions and Wishes

Happy New Year!

Did you make a resolution this year, or did you make a wish? Yes, there is a difference. I stopped making formal resolutions a long time ago because they are always the same, and I’m certain we all share the same ones. Lose weight, eat healthier, be more tidy, finish that (insert project name here), and so on. Resolutions are something I must make happen. It is my responsibility if I succeed or fail. Not really magical when you think about it.

But I love magic, so every year I make wishes. These are things I wish to happen that are not entirely in my control. Things that require a bit of luck, or the touch of fate, or a really strong coincidence to make happen.

On the Winter Solstice I light my Yule log in my tiny fireplace that really shouldn’t be burning real fire, and make my new year’s wishes. I write them out on bay leaves and throw them onto the flames to turn to smoke and rise into the ether. I am a firm believer that the energy you put out is the energy that you receive. By sending my wishes into the sky I feel they have a better chance of coming true, and I have been fortunate that some of them have.

This year my sister introduced my family to wishing papers. If you haven’t seen these yet, they are really cool. Of course they can be a bit dangerous. I have the awesomest video of my grandmother almost catching the table on fire. If you see me, ask and I’ll show it to you.

For 2015 I wish you joy, I wish you luck. I wish you peace and happiness and that you receive not only what you want but also what you need.

Let the Holiday Parties Begin!

Here we are. The first weekend in Saturday, so you know what that means. The start of the holiday party season. If you're like me, you're already booked from now until New Year's.

On this day I am gathering with my fellow chapter members of the Greater Seattle RWA for some food and festivities. We celebrate the accomplishments we made during the year with roses going to those who have sold or released a book, reward those who have met the most goals, and announce who will head the next year's board.

The main event is the white elephant gift exchange. For us, it's all about the wrapping. You won't know what's inside until all of the exchanges and steals have been made, and that's what makes it interesting. I love seeing how creative everyone is with their wrapping. The gift may be wrapped extravagantly with lots of ribbons, or as simple as a gift card tucked into an old Harlequin. Then there's Christa McHugh who one year presented Bondage Barbie. Yes, it was as spectacular as it sounds.

As for me, I've wrapped gifts in gingerbread (yes, I made a huge box out of gingerbread) and rice crispy treats. A few years ago I began the men series. First was the collage of superheroes, then last year were men wearing only Santa hats. Word of warning- make sure the room is free of children before googling "naked Christmas men." I know that should be obvious, but really, it's as racy as you think.

This year I'm continuing the theme of handsome men, and you all get to be the first to see my handiwork. Ta-da!



Oh yes, All six sides are covered in lovely photos of men in kilts. I wish this wrapping paper really existed. I know the men in my family would be ecstatic to receive a gift from me wrapped in all of this gorgeousness. :)

So where ever your holiday plans take you, be happy, be merry, and think sexy thoughts.

Celebrate Veteran's Day with Anna Richland and His Road Home

What better way to celebrate Veteran's Day than a story about a veteran written by a veteran.

     “I understand Sergeant Cruz is unmarried.” Abdullah shared the tribal leader’s words. “I humbly offer him one of my daughters.”
     While Dostum watched like a one-eyed, toothless cupid cradling an AK-47 instead of a bow and arrow, Cruz forced himself to obey the rules for breathing before a five-mile high parachute jump: inhale steadily, no gulps, no matter what instinct urged, no matter that he could barely keep his lips from puckering with rejection. “That’s–” 
     “Shut up.” The interpreter’s voice quavered. “He’s giving you a gift that matters a hell of a lot to him and in his mind, doing you a favor. Half these men can’t afford to get married, and if you throw his daughter in his face, the insult might make them open fire.”
     The air stopped moving except for two flies close to Cruz’s cheek. An insider attack: when a local soldier snaps and kills his allies. Green-on-blue, briefings called it.
     “Get me out of it.” He missed his former teammate Wulf’s interpreting skill like a guy missed his nuts. He disliked giving so much power to someone the team had known for six months but saw no choice. “Whatever you have to say.” He tried to smile, but his lips were too dry to peel away from his teeth.
     Undershirts always soaked through, the price of wearing more than forty pounds of protective gear, but now sweat chilled on his skin. The sun was a joke, making those weapons shiny enough to reflect glare, but not providing a bit of warmth.
     The two men talked while he watched a fighter in a striped vest, the man whose hands were closest to his rifle. Target one if this went to hell. Shoot, roll left to cover Abdullah and count on the rest of the team to roar through the gate and clean the courtyard. One on twelve for ninety seconds, survivable only on paper.
     He didn’t have to field test the plan. His terp pulled a save from the faded Tigers hat that never left his head. 
     “Relax, lover boy.” Abdullah flung an arm across his shoulders.
     Cruz wasn’t sure whose pits gave off the worst funk; his, the man hugging him or the two Afghans bringing them tea, flatbread and lentil paste.
     “Told Dostum you’re engaged to a nice girl back home—”
     An Afghan with a miraculous mouth of teeth pounded Cruz on the back to dislodge the bread stuck in his windpipe choking him. “What?”
     “And because American law doesn’t allow two wives, you regretfully cannot accept this honor, but you’ll bring gifts next week to show how much you appreciate his generosity.”
     “Great. We’ll haul a pallet of rice, but don’t let him think he’s getting weapons.” Wily bastard might have set up the incident to bag more rocket-propelled grenade launchers.        “If proud papas start offering me wives but settle for swag, I know who to blame.”
    Abdullah raised his hands, palms out as if to deny his responsibility, then laughed as he turned them into finger-pistols pointed right at Cruz. “By the way, he expects a photo. He wonders what kind of woman American soldiers marry.”
      “No problem.” A fake fiancée. He’d almost rather risk the business end of an AK-47.
